Favourite Marinades

Hey Guys

So most people think that loosing weight you really need to starve yourself and live on meat, fruit no sauces, or nice tasting meals.  Well as per my previous posts on the WW program we definately eat well.  The only thing I have struggled with is finding some low fat marinades, and finally Weight Watchers have released awesome marinades and sauces and instead of keeping them to myself.  I thought I would forward them onto you guys!  Enjoy


Barbecue Marinade - 1 Propoint per serve- Serves 8
In a food processor or blender process, 3 garlic cloves (chopped), 1/2 a small brown onion (chopped) 1 tsp mild sweet paprika, 1/4 cup (55g) firmly packed brown sugar, 1/3 cup (80ml) tomato paste,  1/4 cup (60ml) lemon juice, 2tbs red wine vinegar and 2tbs of soy sauce until smooth.  Place mixture in a small saucepan and bring to the boil high heat.  Reduce heat and simmer, covered for 10 minutes or until thick.  Set aside to cool before using.  

Note- After marinating you can boil the marinade to use as a sauce. 
Marinate- Beef or lamb ( for 30 minutes or longer)

Mustard Marinade - 1 Propoint per serve - Serves 8
Whisk 1tbs Dijon mustard, 1bs olive oil, 2 garlic cloves (crushed), 2 tsp lemon rind and 1/3 cup (80ml) lemon juice in a medium bowl.  


Note- You can use wholegrain mustard instead of Dijon
Marinate- Chicken (for 30 minutes or longer) or fish (no longer than 15 minutes - or it may start to "cook') 

Cumin and Rosemary Marinade  - 3 Propoints per serve - Serves 4
Heat a small frying pan over medium heat.  Cook 2 tsp cumin seeds for 1-2 minutes or until fragrant .  Using a mortar and pestle crush seeds .  Combine cumin with 1 tbs finely chopped fresh rosemary leaves, 1 tsp finely grated lemon rind, 2 garlic cloves (crushed), 1/2 tsp freshly ground black pepper and 2 tbs olive oil in a small bowl.


Marinate- Beef steaks, chicken breast or thigh fillets or lamb cutlets, steaks, chops, backstrap or rumps (for 30 minutes or longer

From Left to Right- BBQ Marinade, Mustard Marinade and Cumin + Rosemary Marinade
Moroccan Marinade- 1 Propoint per serve- Serves 6
Combine 2 tsp ground corinader, 2 tsp ground cumin, 2 tsp mild sweet paprika, 1/2 tsp ground feennel, 1/4 cup (60ml) lemon juice, 1 tbs extra virgin olive oil, 2 tbs chopped fresh coriander and 1 garlic cloves (crushed) in a small bowl

Note- You can use parsley instead of coriander.
Marinate- Meat, chicken or fish (brush on just before cooking)

Chilli Lime Marinade - 2 Propoints per serve- serves 4
Whisk 1 tbs sunflower oil, 1 tsp sesame oil, 2 tsp lime juice, 1 tsp finely grated lemon rind, 1 tsp sambal oelek, 1 tsp grated fresh ginger and 2 garlic cloves (crushed) in a small bowl.  

Note- You can use a small fresh red chilli (finely chopped) instead of sambal oelek
Marinate- Chicken (for 30 minutes or longer) or fish (no longer than 15 minutes - or it may start to "cook")

Honey, Orange and Soy Marinade - 1 Propoint per serve- Serves 8
Combine 1/3 cup (80ml) soy sauce, 1/3 cup (80ml) honey, 1/4 cup (60ml) orange juice, 1 garlic clove (crushed) and 2 tsp finely grated fresh ginger in a medium bowl.

Marinate- Fish and seafood (no longer than 15 minutes- or it may start to "cook") or pork steaks or chicken (30 minutes or longer)

From Left to Right- Moroccan Marinade, Chilli Lime Marinade, Honey, Orange and Soy Marinade
